Recipe: How To Make Grenache Blanc Preserved Apricots
To celebrate the release of our 2024 Grenache Blanc, we're sharing a signature recipe from Restaurant Alice that has been delighting guests since its opening in 2019. Originally created by Executive Chef Paul Arangorin as a way to use leftover Grenache Blanc, our Grenache Blanc Preserved Apricots quickly earned a permanent place on the menu. Some of you have even asked if you could take a jar home with you!
While we don’t have jars available, we do have the next best thing: an easy recipe you can make using ingredients from your own pantry.
This simple recipe transforms dried apricots into a soft, jammy topping that's as versatile as it is delicious. It’s fantastic on toasted bread, layered into sandwiches, or served as part of a cheese and charcuterie board, just like the one you’ll find at Restaurant Alice.
The bright fruit flavors and delicate floral notes of our 2024 Grenache Blanc shine in this recipe, making it the perfect pairing to enjoy alongside the finished dish.
Ingredients
8 ounces dehydrated apricots
¼ cup granulated sugar
¼ cup Halter Ranch Estate Honey
½ cup Champagne vinegar (apple cider vinegar works as a substitute)
1 cup Halter Ranch 2024 Grenache Blanc
2 black cardamom pods
2 strips orange peel
Instructions
Combine the dried apricots, Halter Ranch Estate Honey, sugar, Champagne vinegar, Grenache Blanc, black cardamom, and orange peel in a small saucepan.
Stir to combine and bring to a boil over high heat.
Reduce the heat to a simmer.
Cook for 45–60 minutes, stirring often to prevent sticking, until the apricots are fully reconstituted and the liquid has reduced to a thick syrup.
Remove the cardamom pods and orange peel before serving.
Enjoy warm or chilled on toast, alongside your favorite cheeses, or as part of a charcuterie spread.
