Smoked Carrots with Honey Whipped Ricotta
Meghan’s Pairing Recommendation: 2022 Cabernet Sauvignon
Ingredients
Honey Whipped Ricotta
1 cup ricotta
1 tbsp honey
1 tbsp milk
Zest of 1 orange
1 tsp salt
Smoked Carrots
2 bunches carrots
1 tsp fresh rosemary, chopped
Honey
1 tsp garlic powder
½ tsp cayenne
Salt and pepper
Halter Ranch Estate Tuscan Olive Oil
Maldon flaky salt
Instructions
Honey Whipped Ricotta:
Add ricotta, honey, milk, salt, and zest of an orange to a food processor. Blend until smooth. Set aside in the fridge until ready to use.
Smoked Carrots:
Preheat smoker to 275 degrees.
Wash the carrots and cut in half lengthwise.
Add the carrots to a baking tray, drizzle with olive oil, and season with garlic powder, cayenne, salt, pepper, and fresh rosemary. Place in smoker for 1 hr.
Remove the carrots from the smoker and drizzle with honey
Smooth the whipped ricotta onto a platter, and top with the carrots. Sprinkle Maldon flaky salt over the top and serve.

2022 Cabernet Sauvignon
Our 2022 Estate Cabernet Sauvignon has aromas of raspberry and Morello cherry. The aromas are framed by hints of cedar and cherry wood. The palate is soft and bursting with flavors of red and black fruits, pie filling and ripe plum. The finish is rich, with subtle yet prevalent rustic tannins.
