Shrimp Aguachiles Verdes
Meghan’s Pairing Recommendation: 2023 Grenache Blanc
Ingredients
½ lb raw shrimp (peeled and deveined), sliced in half lengthwise
1 cup fresh lime juice
1 each cucumber, halved and thinly sliced
¼ each red onion
1 each garlic clove
1 bunch cilantro, finely chopped
1 each jalapeño (seeds are optional)
1 each serrano (seeds are optional)
Salt to taste
Instructions
Place the shrimp in a shallow serving dish in one layer, lightly salt each piece.
In a blender, add the chilis, cilantro, garlic, red onion, lime juice and half of the cucumber and blend until homogeneous.
Add thinly sliced cucumber to the platter.
Pour the mixture over the shrimp and cucumber, cover and refrigerate for 30 minutes.
Top with your favorite garnishes.
Serve with tostadas or tortilla chips.

2023 Grenache Blanc
Our 2023 Grenache Blanc has aromas of white peaches, jasmine, apricot, and a touch of honey. The entry is soft and rich, with underlying acidity and flavors of meyer lemon, honeydew, and ripe tangerine. The finish has soft edges from the lees stirring, creating a balanced, mouth-coating texture with great density.
