Fermentation: Destemmed and fermented with native yeast, resulting in naturally arrested fermentation leaving residual sugar. Aged in neutral oak barrels and never topped, allowing oxidation and sherry like flora to cover the wines surface in the barrel.

Aging: Aged 2 to 6 years in neutral oak barrels.

Pairing Suggestions: Pair with charcuterie, bold cheeses, dried fruits, and dessert.
