2023 Texas Cabernet Sauvignon

Our Texas grown Cabernet Sauvignon is classic in profile. This wine has an elegant palate with silky, integrated tannis that lead to a long structured finish.

Blend: 97% Cabernet Sauvignon, 2% Petit Verdot, 1% Malbec

Aging Recommendation: Drink now through 2045.

Alcohol: 14.3 | pH: 3.86

Harvest Date: Cabernet Sauvignon – 9/2/23 Petite Sirah – 9/29/23

Fermentation: Destemmed and fermented in closed top fermentors, with delestage daily for the first few days of fermentation followed by open pump-overs two to three times daily for an average of 14 days.

Aging: Aged for 24 months in 100% French oak, 30% of the barrels were new.

Pairing Suggestions: Pair with BBQ, roasted meats, reduction sauces and Filet Mignon.
