2022 Ancestor

The 2022 Ancestor has aromas of blackberry, bramble, and cassis.

Blend: 55% Cabernet Sauvignon, 42% Petit Verdot, 3% Malbec

Aging Recommendation: Drink now through 2050.

Harvest Date: Block 60-62 CS- 10/6/22 Block 49 PV- 10/14/22 Block 28C Malbec- 9/19/22

Fermentation: Destemmed and fermented in closed top fermentors, with delestage daily for the first few days of fermentation followed by open pump-overs two to three times daily for an average of 16 days.

Aging: Aged for 16 months in 59-gallon French Oak barrels, 60% of which were new oak.

Pairing Suggestions: Pair with roasted meats, reduction sauces, BBQ and dark chocolate
