Ingredients
Chipotle Aioli:
- ½ cup mayonnaise
- 1 Chipotle in adobo, diced
- 2 tsp adobo sauce
- Zest of 1 Lime
- 1 – 2 tsp Lime juice
- 1 garlic clove, minced
- ¼ tsp smoked paprika
- Salt & Pepper to taste
Corn Fritters:
- 1 15 oz can of corn, drained
- 1 Fresno chili, seeded and diced
- ¼ cup pancetta, diced
- ½ cup shredded cheddar cheese
- ¼ cup green onion, diced
- ½ cup cornmeal
- ½ cup all-purpose flour
- 1 tsp baking powder
- 2 eggs
- 1 tsp sugar
- 1 tsp salt
- ½ tsp garlic powder
- A couple dashes of Smoked paprika
- ¼ tsp pepper
- Halter Ranch Estate Tuscan Olive Oil for frying
- Flaky salt (Maldon)
