2021 Reserve Cabernet Sauvignon

Aromas of dark fruits, ripe cherry, chamomile, and tobacco fill the glass. The entry is soft and layered with elderberry, raspberry, licorice, cocoa, and a touch of eucalyptus. The clean, silky finish is bookended with subtle oak flavors of caramel and baking spices.

Blend: 84% Cabernet Sauvignon, 16% Petit Verdot

Aging Recommendation: Drink now through 2055

Alcohol: 14.6% | pH: 3.82

Harvest Date: Block 21 CS 10/24/21, Block 48 PV 10/21/21

Fermentation: Destemmed and fermented in closed-top fermentors, with delestage daily
for the first few days of fermentation followed by open pump-overs 2-3
times daily for an average of 16 days.

Aging: Aged for 18 months in French oak barrels, 70% of which were new oak

Pairing Suggestions: Pair with lamb, linguica, coffee rubbed steaks and roasted meats.
