Blend: 40% Cabernet Sauvignon, 38% Merlot, 22% Cabernet Franc

Aging Recommendation: Drink now through 2035.

Harvest Date: Cabernet Sauvignon – 10/3/20 Merlot – 9/27/20 Cabernet Franc – 10/14/20

Fermentation: Destemmed and fermented in closed top fermentors, with delestage daily for the first few days of fermentation followed by open pump-overs two times daily for an average of 14 days.

Aging: Aged in 100% French oak, 30% of the barrels were new.

Pairing Suggestions: Pair with hearty red meats, stews, braised ribs, and dark chocolate.
