2020 Cabernet Sauvignon, Reserve

The 2020 Reserve Cabernet Sauvignon has aromas of black fruit, slate, cedar and cigar box. The attack is powerfully driven by black blue fruits combined with black cherry and baking spices. The rich mid palate develops into a soft, complex finish matured by the extended bottle aging at the winery.

Aging Recommendation: Drink now through 2055.

Alcohol: 14.5% | pH: 3.76

Harvest Date: Block 12 Cabernet Sauvignon- 10/17/20

Fermentation: Destemmed and fermented in closed top fermentors, with delestage daily for the first few days of fermentation followed by open pump-overs 2-3 times daily for an average of 16 days.

Aging: Aged for 18 months in French oak barrels, 70% of which were new oak.

Pairing Suggestions: Pair with duck, ribeye, filet mignon, reduction sauces and chocolate.
