Lavender Shortbread Cookies
Meghan’s Pairing Recommendation: 2023 Effervescent Rosé
Ingredients
1 tbsp dried lavender
½ cup powdered sugar, sifted
1 stick unsalted butter, room temperature
1 tsp vanilla extract
¼ tsp salt
1 cup flour, sifted
Instructions
In a standing mixer, cream the butter, powdered sugar, vanilla extract, and salt until the mixture is fluffy and light in color.
Add the lavender and flour.
With floured hands, knead the dough until it comes together, and then roll into a1 ½” diameter log. Wrap the log tightly in saran wrap, then refrigerate until firm about 1-2 hours, or overnight.
Once the dough is firm preheat oven to 300 degrees Fahrenheit.
Prepare a baking sheet with parchment paper and set aside.
Unwrap log, with a sharp knife slice the dough about ¼ of an inch thick (if the dough starts cracking leave at room temperature for up to 10 minutes until it is ready to cut through. Place on prepared baking sheet about 1” apart.
Bake for 20-25 minutes, until bottom is golden brown, and let rest on the pan until cooled.
