Candied Maple Black Cod

Chef Paul’s Pairing Recommendation: 2023 Block 22 Syrah

Ingredients

For the Black Cod:

  • 1 lb black cod filets, sub with salmon

  • 1 lb dark brown sugar

  • ½ cup kosher salt

  • ½ cup maple syrup

Instructions

  1. Combine the salt and sugar in a bowl.

  2. Cover the black cod filets with the mixture and refrigerate for 24 to 72 hours.   

  3. Remove the black cod from the cure and place on a wire rack to dry. Return the cod to the refrigerator uncovered for 6 hours.

  4. Pre-heat your smoker to 175 degrees.    

  5. Place the cod in the smoker and smoke for 2-3 hours. You want the cod to be cooked through evenly but just barely. 

  6. Glaze the cod every 15-30 minutes with the maple syrup.

  7. Once the cod is cooked, remove from the smoker and allow to fish to come to room temperature before placing in the refrigerator to cool completely.  

  8. Slice the cod and serve with your favorite smoked fish condiments such as cream cheese, red onion, and capers.

2023 Block 22 Syrah

The 2023 Block 22 Syrah is bursting with aromas of black cherry, blueberry compote and pie crust. The entry is rich and mouth coating with complex flavors of black berry, olallieberry and candied fruit. A soft and velvety finish is complimented by flavors of cinnamon and caramel.
