Fermentation: Fermented in open-top fermenters with punch down 2-3 times daily for 14-18 days.

Winemaker’s Notes: Incorporating 11% Mourvèdre and a dollop of Malbec, our immensely concentrated 2007 Syrah instantly captures the taster's attention with its opaque purplish color and intense, heady, sweet blackberry, boysenberry, olallieberry and violet aromas, which are complemented by subtle earth, mint and black pepper scents. On the full-bodied palate, the wine's dense, lush, jammy-spicy black fruit flavors are bolstered by ripe tannins and savory oak tones, all culminating in a long, sumptuous finish. This marvelously opulent red will make a delicious accompaniment over the next 7-10 years to hearty foods like pepper steak, barbecued ribs, grilled spicy sausages and cassoulet.
